Iron Rail IPA
ABV: 7.0% English Style India Pale Ale, Maris Otter 2-row, Canadian Honey Malt and Belgian Crystal. Centennial, Kent Golding, and Cascade are added five times during the process, including Dry Hopping.
Aroma: Earthy, Citrusy, and Resinous

Julian Price Pilsner
ABV: 5.0% This is Beer-Beer! It’s what American Pilsner was originally meant to be. A perfect balance between european malts and noble european hops. Also, this brew is a lager, which means cooler fermentation temperatures, which allows the malt and hops to shine through. A single decoction is utilized for added maltiness.
Aroma: Spicy Noble Hops
Tasting/Flavor: Balanced with an Earthiness
Finish: Almost Champagne Like
Witbier Begian Wheat
ABV: 4.6% Belgian style wheat beer, spiced with coriander and orange peel. Raw wheat berries, pilsner malt and a portion of oats make up the grain bill. This is a refreshing summer-time brew.
Aroma: Chamomile and Coriander
Tasting/Flavor: Wheaty and Tart Lemonade

Super Saison Belgian Farmhouse Ale
ABV: 7.0% Belgian Farmhouse Ale. European malts, Styrian Golding Hops, and spiced with coriander and orange peel. A wild yeast (brettanomyces) and dry-hopped make for a very complex and refreshing beverage.
Aroma: Hop Sack Bouquet
Tasting/Flavor: A Delicate Maltiness Balances with a Mild Tartness

Payne’s Pale Ale
ABV: 5.0% American Style Pale Ale. Pale Malt and a portion of Rye malt and some very light crystal and crystal rye. Cascade hops are used in the brewing process with East Kent Golding hops after fermentation, also known as dry hopping.
Aroma: Clean and Hoppy
Tasting/Flavor: A Balance of Malt and Hops
Finish: Cereal Grains with a Touch of Bitterness
Apricot Pale Ale
ABV: 6.5% Canadian Pilsen & Crystal malts, and loads of cascade hops (late additions for minimal bitterness) are married with 252 lbs of Apricot Puree after primary fermentation.
Aroma: Hops and Apricots
Tasting/Flavor: Tangy Apricots
Finish: Dry & Hoppy
ABV: 6.5% An American wheat with a base of 60% pale Barley malt, and 40% pale Wheat malt, and very low hopping. 125lbs of each Cherry & Raspberry purées are added after primary fermentation to supply color, flavor, aroma and more alcohol.
Aroma: Sweet Tarts
Tasting/Flavor: Soft Wheat with a Fruit Medley

Derailed Hemp Ale
ABV: 5.7% Brewed with 2 row Pale Malt, Rye Malt, and a small amount of Black Malt (just enough to give it the color), and Hopped with Cascade Hops to bring out the earthy character of the 150 lbs of toasted Hempseeds added in the Mash Tun. Pushed with Nitrogen on tap.
Aroma: Toasted Earthy Oils

Golem Belgian Strong Golden
ABV: 9.0% Belgian Strong Golden Ale. Wicked and Dangerously drinkable, this brew is made with Belgian pilsner malt, and small portions of wheat, oats, and corn, true Belgian candy sugar, and a variety of European Noble Hops including Saaz. No Fruit or Spices are used in this Brew! It’s all the Yeast’s Flavor Contributions.
Aroma: Bubblegum and Hops
Tasting/Flavor: Juicy and Spicy

ABV: 6.9% English Style Robust Porter with a West Coast twist, Carob and Maple are added into the Kettle. Kent Golding Hops are added just to balance the Malt Sweetness. Organic Pale, Munich, Chocolate, and Caramel malts comprise the Grain Bill.
Aroma: Caramel (Burnt Sugar), Faint Hops

Belgian-Style Abbey Ale
ABV: 7.2% A Fruity, Rich, Monastic Style Beer. Deep brown colored with a generous long lasting fine bubble head. Truly a Meal.
Aroma: Dark Fruits and Caramel
Tasting/Flavor: Velvety with a Hint of Hazelnut
Finish: Regal with a Peppery Spiciness
ABV: 7.1% German style lager, light in color and strong in alcohol and flavor, but much hoppier then the traditional one. All German malts are mashed with a single decoction and Hallertauer Mittelfrüh Hops are used throughout.

ABV: 5.5% Originally from Düsseldorf Germany, this copper-brown colored old-style German ale is clean (lager like), and incorperates dark malts, but it isn’t roasty. Altbiers are Dry, not Sweet, have a firm body, and are balanced with a hoppy bitterness (the beer is dryhopped).
Aroma: Sophisticated Noble Hops
Tasting/Flavor: Bracing Hops with Complex Malts
Finish: Well Balanced and Slightly Smokey
ABV: 6.9% A German. Dark, Double Strength and Cool Fermented Lager. A Labor Intensive Decoction Mash and Noble Hops make this a Very Authentic Brew.

XXV West Coast Style Double IPA
ABV: 8.0% West coast style Double IPA. In the kettle its mainly Centennial and Cascade, with a bit of Kent Golding in the first wort. 95 IBUs of bittering power, with 1 lb per BBL of whole leaf Cascade for dry hop in the bright tank.
Aroma: Dry Hops
Tasting/Flavor: Citrus Hops
Finish: Bitter Hops
The 3rd Rail Imperial IPA Barley Wine
ABV: 11.6% This Imperial IPA is the Iron Rail on steroids. With twice as many hops as the Iron rail, it clocks in at about 100 IBUs! (International Bittering Units)
Aroma: A hop menagerie with balanced malt sweetness
Tasting/Flavor: Hops like silk
Finish: Endless hop layers and thanks to the honey malt, not strongly bitter
ABV: 5.3% A classic english-style stout. Rich in body and silky smooth with a dry finish. Pushed with Nitrogen for a creamy-mouth feel.

Vadim Bora Russian Imperial Stout
ABV: 9.2% Originally created for the Russian royal family by English Brewers. With the untraditional addition of 168 lbs. of raspberries, this brew is Intensely Decadent.
Aroma: Espresso/Dark Chocolate
Tasting/Flavor: Chocolate Mousse with Raspberry Layers
Finish: Tart Fruit with Burnt Undertones
Dark Imperial Pilsner
ABV: 8.2% We take our Pilsner recipe and increase the barley malt to raise the original gravity and add some dehusked black malt (which has very little roast flavor) for color. Quadruple the (all noble) european (Spalter Select & Hallertau) hops, then dry hop with more Hallertau. This beer is at least 95 IBUs!
Aroma: Hop Candy

PRETTY MUCH A PARTY IN YOUR MOUTH.
An Homage to Westvleteren ABV: 10.6% In the style of the strongest monastic beers (Quad). This ale is a reason for the description “Liquid Bread”. We use Belgian Malts, Styrian Golding hops, and very dark Belgian candy syrup combined with a fruity and somewhat spicy Belgian Yeast Strain.
Aroma: Raisins and Dates
Tasting/Flavor: Caramel Toffee / Black Licorice

Historically produced by Cistercian Monks to sustain themselves during a 40-day Lent.

ABV: 8% Amber brown color, clean maltiness, slightly smokey (peaty) and just a touch of English Golding Hops. Served traditionally, with lower carbonation and pushed with nitrogen for creamy texture.

Creature Belgian-Style Imperial IPA
ABV: 11.3% Imagine if you were to make a Belgian Trippel (like the Golem) and Hop it like an American IPA. This is the Wedge’s take on that emerging hybrid style. The Belgian yeasts impart a pear-like character while dry-hopping (with Cascade Hops) gives it citrusy qualities.
Aroma: Clementines & Grapefruit
Tasting/Flavor: Juicy, Tangy
Finish: Dry (Brut) Champagne
Bière de garde
ABV: 8.9% Can be translated to “Beer to Keep” - this is the French cousin of the Belgian saison. This ale is more of a balance between malt & hops with a long secondary fermentation with brettanomyces (wild yeast). It’s unfiltered & dry-hopped which adds to the rustic Farmhouse character.
Aroma: Fruity, Earthy complexities
Finish: Dryhops and wine-like
Chocolate Oatmeal Stout
ABV: 5.0% This is our English-style Oatmeal stout with 48 lbs. of Cocoa Nibs added at 3 different stages. Rich in body, silky smooth and pushed with Nitrogen.
Aroma: Chocolate (DUH)

Flemish Style Brown Ale
ABV: 7.2% Six different malts, German hops, Brettanomyces yeast, French Oak and lactic acid all come together for this classic Belgian style beer. This beer also takes lots of time to age, so enjoy!
